Grape terpenols play a major role in the varietal character of wines, in particular wines from Muscats, Gewürtzraminer and Riesling. Grape processing releases small quantities of free aromatic terpenols and a larger quantity of odorless glycosylated precursors providing an abundant aroma reserve.
